Sugar Cookies
2/3 CUP SHORTENING
3/4 CUP WHITE GRANULAR SUGAR
1 TSP. VANILLA
1 EGG
4 TSP. MILK
2 CUPS FLOUR
1-1/2 TSP. BAKING POWDER
1/4 TSP. SALT
Use electric mixer to cream shortening, sugar and vanilla. Add egg; beat till
light and fluffy. Stir in milk. Sift together flour, salt and baking powder and blend
into creamed mixture. Divide dough in half and chill for 1 hour. Roll out half of cookie
dough on a slightly floured surface to 1/8 inch thickness. Cut with desired shape cookie
cutters. Bake on parchment lined cookie sheet at 375 degree F. oven for about 6 to 8 min.
Cool slightly then remove from cookie sheet. Makes about 2 dozenCookies.
Roll only half of dough at a time; keep remainder chilled for easier rolling.
Gingerbread Cookies
5 -1/2 CUPS FLOUR
1 TSP. BAKING SODA
1 TSP. SALT
1 TSP. GROUND NUTMEG
3 TSP. GROUND GINGER
2 TSP. GROUND CINNAMON
1 TSP. GROUND CLOVES
1 CUP SHORTENING
1 CUP WHITE GRANULAR SUGAR
1 -1/2 CUPS MOLASSES
2 EGGS
Sift together flour, soda, salt, nutmeg, cinnamon and cloves. Melt shortening in
saucepan large enough for mixing dough. Add sugar, molasses and eggs and mix well.
Graduallystir in 3/4 of the flour mixture. Work in remaining flour mixture by hand.
Divide dough into thirds for easier handling.
Roll dough out on parchment paper to about 1/8 to 1/4 inch thick and cut with desired
shape cookie cutters. Bake in 350 degree F. oven for 9 to 12 minutes or untill done.
This recipe is also great for Gingerbread houses.
Recipe yields aprox. 2 to 3 dozen cookies.
If using the gingerbread cookies as Christmas Tree Ornaments, punch a hole in the
top of the cookie with a drinking straw before you bake and remake holes immediately
after removing cookies from oven.
Nieman-Marcus Chocolate Chip Cookies
( RECIPE YIELD ABOUT 112 COOKIES )
2 CUPS BUTTER
2 CUPS WHITE GRANULAR SUGAR
2 CUPS BROWN GRANULAR SUGAR
4 EGGS
2 TSP. VANILLA
4 CUPS FLOUR
1 TSP. SALT
2 TSP. BAKING SODA
2 TSP. BAKING POWDER
5 CUPS BLENDED OATMEAL
24 OZ. CHOCOLATE CHIPS
1 - 8 OZ. HERSHEY CHOCOLATE BAR GRATED
3 CUPS FINE CHOPPED NUTS (Pecans or Walnuts)
MEASURE OATMEAL AND BLEND INTO A FINE POWDER IN FOOD PROCESSOR OR BLENDER
Cream butter and both sugars together. Add eggs and vanilla. Mix in flour,oatmeal,
salt, baking powder and soda. Add chocolate chips, Hershey bar and chopped nuts.
Roll into 1 inch balls and place on a parchment lined cookie sheet about 2 inches apart.
Bake in 375 degree F. oven for 10 minutes.
