Cake Recipes
Butter Cake (pound cake)
1/2 CUP BUTTER (room temp.)
1/2 TSP. VANILLA
1/2 CUP WHITE GRANULAR SUGAR
2 LARGE EGGS
1 -1/2 CUPS FLOUR (sifted)
1 TSP BAKING POWDER
1/3 CUP MILK
Using an electric mixer, beat butter until creamy.
Gradually add the sugar and beat until light.
Add eggs 1 at a time, beating well after each addition.
Mix in the the sifted flour and baking powder alternatly
with the milk. Beat on medium speed untill mixture is smooth.
Spread into prepared 8 inch square pan. Bake in preheated
350 degree F. oven for 40 to 45 minutes or until done.
Applesauce Cake
1 CUP SHORTENING
2 CUPS WHITE GRANULAR SUGAR
2 LARGE EGGS
2 -1/2 CUPS FLOUR
2 TSP. GROUND CINNAMON
2 TSP. BAKING SODA
1 TSP. GROUND CLOVES
1/2 TSP. SALT
1 CUP RAISINS
1 CUP CHOPPED WALNUTS OR PECANS
2 CUPS APPLESAUCE (hot)
Mix together the shortening, sugar and eggs.
Sift flour, baking soda, salt and spices together.
Add to liquid mixture. Blend well. Fold in raisins and nuts.
Add hot applesauce. Blend thoroughly. Pour in prepared 10 inch
round pan 3 inch deep.Bake in 350 degree F. oven for 45 min. or untill done.
Mother Howe's Angel Food Cake
10 EGG WHITES
1 -1/2 CUPS WHITE GRANULAR SUGAR
1 -1/2 TSP. CREAM OF TARTAR
1/2 TSP. ALMOND EXTRACT
1/2 TSP. VANILLA
1 CUP CAKE FLOUR (sifted)
Sift flour 3 times. With an electric mixer beat egg whites slightly, add cream of tartar,
vanilla and almond extract and beat till soft peaks form. Beat in sugar 2 to 3 Tbsp. at a
time, continuing to beat turning the bowl until mixture holds. Sift 1/4 of the flour over
mixture. Fold in lightly turning bowl. Fold in remaining flour by fourths. Place batter
into ungreased angel food pan. Bake in preheated 350 degree F. oven for 1 hour.
Allow cake to hang upside down until cooled.
Eggless, Butterless, Milkless Cake
Boil for 5 Min. in large saucepan
1 cup sugar
1/2 cup shortening
1/2 tsp. salt
1 1/2 cups water
1/2 cup raisins
1 tsp. cinnamon
1 tsp. ground cloves
1 1/2 tsp. nutmeg
After boiling, let mixture stand and cool.
Dissolve 1 tsp. Baking soda in 1 Tbsp. warm water
and add this to above cooled mixture. Add 2 cups flour
and mix till combined. Bake in 9 inch round greased pan for 30 min. at 375 F.
No Bake Brownies
1 cup chopped walnuts
4 cups graham wafer crumbs
1/2 cup icing sugar
1 pkg (350 gram) semi-sweet chocolate chips melted
1 cup evaporated milk
1 tsp. vanilla
Combine nuts, crumbs, and icing sugar in large bowl mixing well.
Add melted chocolate to milk and mix. (reserve 1/2 cup chocolate for topping)
Stir crumb mixture into remaining chocolate and mix well.
Spread in greased 9 inch pan.
Spread remaining chocolate over top and chill.
Sour Cream Pound Cake
3 cups flour
3 cups sugar
1 cup butter
1 tsp. baking powder
6 extra large eggs
1 cup sour cream, 1 tsp. vanilla
Cream butter and sugar. Add eggs, sour cream and vanilla and beat till
fluffy. Mix in the flour and baking powder. Pour into 10 inch round
pan x 3 inch and bake at 325 F for 1 hour 20 min.
Low Fat Cake From Cake Mix
Cake Mix of your choice
1 Tbsp. flour
Applesauce to equal oil in recipe
Follow package directions, except add 1 Tbsp. flour.
Replace oil with equal amount of apple sauce and replace
eggs with egg whites to equal eggs in recipe. Bake as directed.
Cocoa Cake ( Cholesterol Free )
1 1/2 cups Flour
1 cup Sugar
3 Tbsp. Cocoa
1 tsp. Baking Soda
1 Tbsp. Vinegar
1/3 cup Corn Oil
1 tsp. Vanilla
1 cup Cold Water
Sift first 4 ingredients together. Combine with rest
of ingredients and blend well. Pour into a greased and floured
8 inch square cake pan and bake at 350 F for 30 min.
Triple Chocolate Cake
1 Dark Chocolate Cake Mix
1 box chocolate Instant Pudding Mix
3/4 cup Sour Cream
1/2 cup Vegetable Oil
1/2 cup Water
1/4 cup mayonnaise
4 Eggs
3 Tbsp. Almond Liqueur
1 tsp. Almond Extract
1 cup Chocolate Chips
1/2 cup Toasted chopped Almonds
Glaze
1 cup Icing Sugar
2 Tbsp. Milk
1/4 tsp. Almond Extract
Place all ingredients except chocolate chips and almonds in a large mixing bowl.
Beat 2 min. at med. speed using electric mixer. Fold in almonds and chocolate chips.
Pour in grease and floured 10 inch bundt pan. Bake in 350 F oven for 55 min. Remove
cake from pan and cool slightly. Pour mixed glaze over warm cake.
Carrot Pineapple Cake
2 Cups Sugar
3 Eggs
1 1/2 cups vegetable oil
2 tsp. Vanilla
2 tsp. Baking Soda
1 tsp. cinnamon
1 tsp. Salt
3 cups Flour
2 cups Grated Carrots
3 cups Flaked Coconut
13 ounce can of Crushed Pineapple ( with juice )
1 cup chopped nuts ( walnuts or pecans)
Cream sugar, eggs and oil together. Add vanilla. Mix soda, cinnamon,
salt and flour and add to sugar mixture. Mix thoroughly; add carrots,
coconut, pineapple and nuts and mix together. Pour into greased and floured
9 inch x 13 inch pan. Bake at 300 F for 90 min. or untill done.
