Chicken Luau
1 frying chicken (about 2-1 lbs.), cut up -
½ cup water
2 tbsp. shortening
1 ½ lbs. fresh spinach
Salt and pepper
1 cup coconut cream
Brown chicken pieces in shortening and sprinkle with salt and pepper. Add water, cover, and simmer until chicken is tender. Meanwhile, wash spinach and remove stems. Cut leaves into 1-inch pieces. Steam with a little water until spinach is tender, Drain spinach and chicken and combine. Add coconut cream and heat but do not boil. Makes 4 servings.
