Baked Chicken Dinner
1 cup quick-cooking rice
2 tablespoons vegetable oil
1 10-ounce can condensed consomme
1 11-ounce package frozen mixed vegetables
1 tablespoon chopped onion
2 tablespoons water
juice of 1 lemon
¼ teaspoon savory
salt, pepper
4 3 ½ -ounce servings chicken parts
Bring first 5 ingredients to a boil; pour into a covered casserole or baking dish. Saute chicken pieces slowly in hot oil about 10 minutes; place on rice mixture. Break up mixed vegetables and shake them around chicken. Sprinkle with lemon juice and seasonings; cover. Bake in 350 F, oven for 35-40 minutes.
