Chicken A La Orange
½ cup flour
¼ cup water
1 teaspoon salt
2 cups orange juice
2 teaspoons grated orange peel
2 tablespoons brown sugar
1 teaspoon paprika
1 teaspoon salt
½ teaspoon pepper
¼ teaspoon ground ginger
1 2-pound frying chicken (cut up)
1/8 teaspoon cinnamon
1 tablespoon butter or margarine
Combine first 5 ingredients in a bag; add chicken pieces and toss until well covered with flour; reserve 2 tablespoons of flour mixture. Melt butter in frying pan; cook chicken over low heat until brown on all sides; add water, cover and simmer gently for 30 minutes, or until tender; turn occasionally; add more water if necessary. Remove chicken to warm platter; pour off pan drippings, reserve 2 tablespoons.. Return to pan with reserved flour mixture; blend well. Add remaining ingredients gradually, stirring constantly; cook until mixture boils. Serve over chicken.
