Gingery Baked Chicken
8 4-ounce pieces frying or broiling chicken
2 teaspoons ginger
2 tablespoons lemon juice
2 tablespoons cooking oil
¼ cup honey
2 tablespoons chopped onion
½ cup apple juice
1 clove garlic, crushed
2 teaspoons soy sauce
1 teaspoon salt
Simmer all ingredients except chicken together for 5 minutes. Brush chicken generously with mixture; place skin side up in one layer in a 9 x 12-inch baking dish. Bake uncovered in 375 F. oven for 20 minutes; turn pieces over and brush again with remaining sauce. Cover and continue baking in 350 F. oven for 20 minutes; uncover, turn pieces over and bake 20 minutes longer.
