Chicken Oceania
1/3 cup flour
2 whole chicken breasts, split, skinned and boned
½ teaspoon salt
¼ teaspoon celery salt
2 tablespoons salad oil
¼ teaspoon garlic powder
2 tablespoons soy sauce
¼ teaspoon nutmeg
4 slices canned pineapple, undrained
Blend first 5 ingredients together; coat chicken pieces thoroughly. Saute chicken in oil 5-7 minutes on each side. Pour last 2 ingredients over chicken; cover, simmer 10 minutes or until gravy is slightly thickened.
Serve chicken topped with pineapple slices and gravy.
