Roast Chicken with Butter and Parsley

4 ½ - 5 ½ lb. chicken

4 sprigs parsley

2/3 cup butter

2/3 cup cold water

seasoning

Stuff the chicken with chopped parsley, half the butter, and seasoning. Spread the remaining butter all over the chicken. Calculate the cooking time and allow 20 minutes per lb. plus an additional 20 minutes, for the bird is roasted in a preheated 425 F. oven for 7 minutes only, after which the heat should be reduced to 375 F. Pour water into the pan after 7 minutes roasting and continue cooking. The bird has a delicious flavor and moist texture.
