Dixie Fried Chicken

1 frying chicken

3/4 cup milk

1 teaspoon salt

flour

Crisco for pan frying

Cut chicken into pieces, dip in milk and then coat heavily with salted flour. Melt 1/3 cup Crisco in a 9" frying pan. When heated, add chicken and fry until brown on all sides. Reduce heat, cover frying pan and cook until tender, about 25 minutes. Remove chicken to warm platter and make gravy. To browned drippings in pan add flour. Stir in milk and heat until smooth and thickened.
