Crispy Parmesan Baked Chicken

4 to 6 servings cut up chicken

salad oil or Italian dressing

dry stuffing mix

parmesan cheese

Dip chicken pieces in oil or dressing, then dredge in a mixture of stuffing mix and cheese. Arrange, skin side down, in a greased shallow bake pan and bake at 350 F. for 30 minutes. Turn and bake until tender, about 20 minutes longer. Serve with chef's salads frozen mixed vegetables and French fries. With French fries, cover chicken with foil for 35 minutes. Uncover, increase heat to 400 F. and pop in a tray of frozen French fries. Continue baking 20 minutes or until potatoes are crisp and chicken tender.
