Barbecue Chicken Kabobs

1 can (14 oz.) pineapple chunks

1 lb. boned chicken breasts (4 breasts)

1 medium green pepper

1 envelope Shake n' Bake Barbecue Style Coating Mix for Chicken

2 small onions

¼ lb. fresh mushrooms (or 10 oz. can)

Drain, reserving juice of the can pineapple chunks, Cut green pepper into 1-inch pieces and onions into quarters. Cut chicken breasts into 1-inch pieces. Moisten chicken pieces in reserved pineapple juice. Coat chicken pieces with Shake 'n Bake as directed on package. Arrange, pineapple, green pepper, onions, chicken and mushrooms (whole) on 8 skewers. Place skewers in a 13 x 9 inch pan lined with foil. Sprinkle with remaining coating mix. Bake at 350 F. for 40 minutes. Makes 4 servings. Serve with rice.
