Toaster Oven Chicken Cutlet

2 or 3 thin onion slices

3/4 cup (6 oz.) tomato juice

½ bell pepper, thin strips

¼ teaspoon dried basil, oregano or pizza herbs

3 ounce chicken fillet (½ skinned,boned breast)

2 tsp. grated sharp Romano cheese

Tear off a square of aluminum foil. Spray shiny side with cooking spray. Arrange onion and bell pepper in the middle, with chicken on top. Pour tomato juice over chicken. Sprinkle with herbs and cheese. Fold over foil to enclose chicken loosely; crimp the edges to seal. Place packet on toaster oven tray. Set temp. on high (450 F.); Bake undisturbed 10 minutes. Remove from oven and wait 5 minutes before opening packet. Makes 1 serving.
